Rissois de Espinafres e Cogumelos

As refeições sem carne nem peixe são agora tão normais para nós que, quando não as incluímos, já notamos a diferença na nossa ementa semanal!

Andava a namorar este recheio de rissois, desde que vi a Luísa, do Sardinha Fora da Lata, a fazê-los, e não descansei enquanto também não fiz. A Luísa tem uma receita totalmente vegan que podem encontrar no instagram dela – e até vos explica como panar sem ovo, que eu sei que é um problema para quem tem miúdos alérgicos a ovos!. Eu adaptei as quantidades ao que tinha. E ficaram igualmente deliciosos! Uma excelente alternativa aos recheios de carne e peixe.

Ingredientes para cerca de 18 rissois:

(adaptado de uma receita da Sardinha Fora da Lata)

1 dose de massa de rissois (vejam a receita da massa aqui ou aqui)

ovo batido para panar

pão ralado para panar

Recheio de Espinafres e Cogumelos:

1 cebola

azeite q.b.

240g de espinafres baby

350g de cogumelos brancos

sal e pimenta q.b.

molho bechamel q.b.*

  • Para o molho bechamel, leve ao lume um tacho com 50g de manteiga ou azeite e junte depois 50g de farinha. Mexa bem, de modo a cozinhar a farinha e formar uma pasta. Junte depois 350ml de leite ou bebida vegetal a gosto, aos poucos e poucos, incorporando a pasta de farinha com o leite, até obter um bechamel de consistência grossa. Tempere depois a gosto com sal, pimenta e noz moscada.

Preparação:

Estique depois sobre uma superfície enfarinhada e o mais fino que conseguir a massa dos rissois e recheie com a mistura já fria de cogumelos e espinafres, cortando depois os rissois com um copo ou cortador próprio.(Atenção para não deixar ar ao fechar os rissois, ou eles podem rebentar ao fritar!) Vá colocando os rissois numa superfície enfarinhada.

Passe depois os rissois no ovo batido e depois por pão ralado. Neste ponto poderá congelar os rissois, 

Frite depois em óleo abundante até que fiquem dourados e escorra sobre papel absorvente.
