Lasanha de Coelho com Espinafres e Cogumelos


Chega Agosto e nós já contamos os dias para irmos de férias. E começamos também a esvaziar o frigorífico, e a  gastar e a inventar com o que há. Foi assim que o que estava para ser uma massa mais simples, acabou numa lasanha para gastar um resto de massa de lasanha e à carne de juntaram espinafres e cogumelos para enriquecer e gastar estes legumes. E a lasanha acabou no forno que já estava quente, e onde havia também pão e um bolo de banana a fazer.

Durante esta semana, vai ser isto. Não fomos às compras e lá vamos utilizando o que há aqui por casa para não desperdiçar nada. E assim fazemos este exercício de rentabilizar ingredientes que já temos!


Ingredientes para 4 pessoas:


8 folhas de lasanha seca (e que não necessite de pre cozedura)

500g de carne de coelho picada

200g de cogumelos castanhos

100g de espinafres frescos

1 cebola pequena

2 dentes de alho

1 folha de louro

azeite q.b.

sal e pimenta q.b.

150g de queijo ralado 

400ml de molho bechamel caseiro


Preparação:


Pique a cebola e os dentes de alho e leve a refogar num tacho, juntamente com duas colheres de sopa de azeite e com uma folha de louro. Quando estiver transparente, junte a carne de coelho e envolva bem e deixe cozinhar até que a carne ganhe cor. Junte depois os cogumelos, envolva bem e tempere de sal e pimenta deixando cozinhar até que os cogumelos cozinhem e não exista água no tacho. Junte depois os espinafres e envolva bem até que murchem. Retifique os temperos, e reserve.

No fundo de um tabuleiro coloque um pouco de molho bechamel. Por cima disponha 2 placas de lasanha, por cima das placas coloque um pouco da mistura de carne, queijo ralado e mais um pouco de molho bechamel. Coloque depois mais 2 placas de lasanha, mais carne, queijo e molho e mais 2 placas de lasanha. Coloque depois a restante carne, queijo e molho e termine com as 2 ultimas placas de lasanha, um pouco de queijo por cima e o restante molho.

Tape tudo muito bem com papel de alumínio e leve ao forno previamente aquecido a 180ºC durante cerca de 45 minutos. Ao fim desse tempo retire o papel de alumínio e deixe a lasanha tostar uns minutos.

Sirva depois com uma salada verde.
