Das receitas simples e mais frescas de verão. Uma variação da tradicional salada de grão e bacalhau, desta vez com tomate doce e maduro de verão.
Uma receita que se pode fazer com antecedência e que está pronta a servir, óptima para piqueniques, como entrada num almoço de amigos ou num lanche ajantarado e para as marmitas, esse clássico que veio para ficar nas nossas vidas!

Ingredientes para 4 pessoas:
500g de grão de bico cozido e escorrido
450g de migas de bacalhau demolhadas e descongeladas
1 cebola grande
2 dentes de alho
4 tomates chucha
1 folha de louro
sal e pimenta q.b.
salsa picada q.b.
azeite q.b.
vinagre q.b.
Preparação:
Corte a cebola em meias luas e pique os dentes de alho. Leve-os a alourar num tacho com um pouco de azeite juntamente com a folha de louro e assim que começar a ficar dourado junte o bacalhau já descongelado bem escorrido. Envolva bem na cebolada e deixe estufar até estar cozinhado, temperando com um pouco de pimenta.
Entretanto escorra bem o grão de bico cozido e coloque numa travessa. Corte o tomate em cubinhos e junte ao grão. Assim que o bacalhau esteja cozinhado, envolva também com o grão e o bacalhau.
Para temperar misture cerca de 3 colheres de sopa de azeite com 1 colher de sopa de vinagre e envolva no grão misturando bem. Polvilhe com salsa picada.
Sirva.
