Os “friands” são bolinhos feitos de claras e amêndoas, portanto perfeitos para aproveitar claras e nasceram a partir da receita francesa dos “financiers”. Na Australia a receita foi adaptada e ganharam o nome de “friands”. Como adaptei a partir de uma receita do Bill Granger mantive o nome australiano.
A receita e excelente para aproveitamento de claras, e para variar das pavlovas que é o que faço habitualmente com as muitas claras que vou tendo. Ficam uns deliciosos bolinhos húmidos e muito saborosos por causa da amêndoa.
Ingredientes para 12 bolinhos:
150g de manteiga
125g de amêndoa picada em farinha (usei com pele)
100g de farinha
250g de açúcar em pó
6 claras
1 colher de chá de essência de baunilha (opcional)
24 framboesas
24 mirtilos
Preparação:
Derreta a manteiga num tachinho e reserve.
Numa taça misture a farinha de amêndoa com a farinha e o açúcar em pó. Reserve.
Bata as claras em castelo e envolva depois cuidadosamente a mistura de farinha, amêndoas e açúcar. Acrescente depois a manteiga derretida e a essencia de baunilha e envolva cuidadosamente até estarem incorporado.
Unte depois se necessário 12 formas de queques e encham até cerca de 2/3 com a mistura anterior.
Coloque depois 2 framboesas e 2 mirtilos em cada forminha.
Leve ao forno previamente aquecido a 180°C durante cerca de 20 a 25 minutos, até ficarem dourados.
Retire e deixe arrefecer sobre uma grelha.
