Sopa de Feijão Verde (sem batata)

Há coisas que faço tantas vezes, e que raramente partilho. É o caso das sopas. Mas pr incrível que pareça, é raro o dia em que as sopas não recebam  perguntas e comentários sobre a maneira como são feitas, combinação de ingredientes, e como faço sem usar batata…

Ora bem. Há mesmo muitos anos que raramente coloco batata na sopa. Quando muito batata doce. Mas batata normal, é mesmo muito raro colocar.

Em vez de batata, uso outros ingredientes que dão na mesma cremosidade à sopa, como couve flor, abóbora, courgete ou chuchu. Usando estes ingredientes a sopa fica com cremosidade e ninguém nota a falta de batata.

Habituei-me a fazer as sopas assim, e estes ingredientes, juntamente com a cenoura são sempre a maioria das bases de todas as sopas que faço, Depois é juntar outros ingredientes, como o alho francês, couve, batata doce, cenoura, cebola (que também uso muito pouco na base da sopa), nabo, ….

Porque gostamos das sopas muito cremosas, uso quase sempre a bimby, mas para fazer uma sopa cremosa, basta uma boa varinha mágica e triturar, triturar e triturar!!

Normalmente também não coloco 10 ingredientes numa sopa. Porque depois é só uma enorme mistura de horticolas, e pessoalmente acho que não fica tão saborosa, nem depois se distingue, sabores. Isso foi algo que aprendi com a introdução alimentar dos meus filhos. Na introdução alimentar das crianças, as sopas não devem ter mais de 5 ingredientes, para que seja possível as crianças poderem começar a distinguir sabores. Hoje usamos 3 ou 4 legumes, na próxima sopa variamos. Se usamos 10 coisas diferentes numa sopa, estamos a mascarar todos os sabores e nem quase os conseguimos distinguir. Por isso, uso sempre essa “regra” de 4, no máximo 5 legumes diferentes numa sopa, mas entre 3 a 4 é o normal aqui por casa!

 A sopa de hoje é de feijão verde e sem batata!

Ingredientes:

1 courgete grande

3 cenouras

250g de feijão verde

1 tomate coração de boi médio

sal e azeite q.b.

Preparação:

Lave bem os legumes. Corte a courgete em pedaços (se for muito grande, convém tirar a casca e as sementes interiores, Têm tendência a amargar a sopa! Se tiver esquisitos em casa, também pode tirara a casca!) Corte também a cenoura (eu não descasco, lavo apenas muito bem e uso com a casca!)

Corte também o feijão verde em pedaços pequenos, assim como o tomate, e reserve.

Coloque um pouco de azeite no fundo de um tacho (ou da bimby) e coloque a cenoura e a courgete. Deixe refogar um pouco, em lume brando e com a tampa, mexendo de vez em quando. (Na bimby, coloco a 100ºC, 15m, velocidade colher – sem água, só os legumes e azeite).

Ao fim desse tempo, cubra os legumes com água, só mesmo até cobrir, tempere de sal, e deixe cozinhar até os legumes estarem macios. (Na bimby, mais 15m, temperatura varoma, velocidade 2,5, e aproveitar para já cozinhar a vapor o feijão verde partido na varoma). Quando os legumes estiverem macios, triture a sopa até que fique bem cremosa (Na Bimby, reservar o feijão verde, e triturar a base 1 minuto, velocidade 10 )

Acrescente agora água até a sopa ficar com a consistência desejada e deixe levantar fervura. Retifique de sal, junte o feijão verde e deixe cozinhar até que este esteja macio. Acrescente o tomate partido em pedaços, e envolva bem. (Na bimby, acrescente também agua até a sopa ter a consistência desejada e ratifique de sal, acrescente o feijão verde já cozido a vapor, e o tomate, e deixe cozinhar mais 5 minutos, 100ºC, velocidade colher).

Sirva quente ou à temperatura ambiente!

    Por curiosidade, diz que não coloca cebola na sopa, e alho, também não costuma colocar?
    E depois para guardar, deixa arrefecer na bancada antes de fechar e guardar/congelar? Ou coloca ainda quente já no frigorífico ou congelador?
